Almond Avocado Kale Salad

Fresh, raw, green leaves are generally considered a healthy addition to our diets and it’s easy to keep them interesting and delicious with simple recipes that are full of flavour and nutritional goodness.

This satisfying salad with perfectly balanced flavours and nourishing ingredients combines raw kale with healthy fats to increase uptake and absorption of valuable nutrients including vitamins A,D, E and K which are fat soluble. Enjoy as a light meal or side.

Makes Two Servings


• ¼ tsp ground black pepper
• 1 tsp Himalayan salt
• 1 garlic clove
• 1 tbsp apple cider vinegar
• 1 tbsp dried parsley
• 4 tbsp ground almonds
• 30 g black olives
• 60 g celery
• 100 g avocado
• 200 g kale


In a bowl, mix together the kale and salt and massage the kale until it has a cooked texture.

Blend the avocado, celery, garlic and vinegar until smooth and mix with the kale until it is well coated.

In a bowl, mix together the ground almonds, parsley and pepper and sprinkle over the kale along with the olives and massage again to fully coat the kale.
