Cheesy Sesame Crackers

Crunchy and crumbly with a deliciously intense flavour, these oil, gluten and grain free cheesy sesame crackers are perfect enjoyed alone as a snack, with meals, spreads or dips. If you are unable to eat sesame seeds, use pumpkin seeds instead.

Ingredients

1 tsp rock salt
50 g cashews
50 g nutritional yeast
50 g sesame seeds
50 ml water
60 g tapioca flour
70g almonds

Method

Process the almonds, cashews, tapioca and 40 g nutritional yeast into a smooth flour, stopping as soon as the mixture begins to clump together.

Transfer to a bowl, add the water and mix with a spoon. Add the remaining nutritional yeast and sesame seeds and knead by hand into a dough.

Roll out to approximately 2 mm tall and cut into squares of desired size. Bake at 180°C for 25 minutes. Allow to cool completely before serving.

Store in an airtight container for up to 3 days.
