Easy Black Bean Chilli

Delicately spiced, slightly sweet and bursting with flavour, this easy black bean chilli takes minutes to prepare and only 20 minutes to cook.

Ingredients

⅛ tsp hot chilli powder or 1 tsp cayenne powder
½ tsp ground coriander
½ tsp paprika powder
½ tsp smoked paprika powder
½ tbsp date sugar
½ tbsp garlic powder
1 tsp ground cumin
1 tsp onion powder
1 tsp ground rock salt
1 tbsp cacao powder
3 bay leaves
55 g red bell pepper
70 g mushrooms
70 g red onion
300 ml water
360 g cooked black beans
400 g chopped tomatoes

Method

Chop the pepper, onion and mushrooms and add to a pan with everything apart from the beans.

Cook on medium heat for 15 minutes, add the beans, bring to a boil and cook for a further 5 minutes, stirring throughout.

Remove the bay leaves and serve, alone, with potatoes, rice or pseudo grains.
