Hazelnut Dessert Balls

Hazelnuts have a distinct and delicious flavour that works brilliantly in desserts and a creamy and crunchy texture that makes them perfect for these dessert balls which are, truffly, crumbly and cakey. Use raw of roasted hazelnuts depending on preference.

Chocolate Truffles – Makes Eight Truffles

Ingredients

Balls

• 20 g cacao powder
• 45 g hazelnuts
• 120 g pitted medjool dates

Topping

• 10 g hazelnuts
• 10 g cacao nibs

Caramel Bites – Makes Eight Bites

Ingredients

Balls

• 20 g lucuma powder
• 80 g hazelnuts
• 100 g dried mulberries

Topping

• 10 g hazelnuts
• 10 g dried mulberries

Vanilla Balls -Makes Ten Balls

Ingredients

Balls

• ½ vanilla bean
• 85 g pitted medjool dates
• 145 g hazelnuts

Topping

• ½ vanilla bean
• 25 g hazelnuts

Method

In a food processor or high speed blender, process the topping ingredients until broken down and mixed well together but retaining some texture. Spread out on a plate.

In a food processor or high speed blender, process the ball ingredients until a smooth dough, separate into 8 or 10 equal pieces and roll into balls.

Gently but with some pressure, roll each ball in the topping mixture.

Refrigerate to set for 1 hour or enjoy immediately.

Use leftover topping on banana ice cream, in granola, on fruit salads and smoothie bowls.
