Mince Pie Biscuits

Wonderfully soft and crumbly and easy to make, these mince pie biscuits are just as good as the real thing and delicious enjoyed alone or with coconut yoghurt or cream.


1 tsp orange zest
2 tsp ground Ceylon cinnamon
20 g date sugar
20 ml maple syrup
25 ml orange juice
45 g dried cranberries
60 g tapioca flour
75 g hazelnuts


In a food processor or high speed blender, process the cinnamon, date sugar, hazelnuts and tapioca into a flour, stopping before the nuts release oil and the flour begins to clump together.

Transfer to a bowl and stir in the rest of the ingredients. Mix together well to form a dough.

Roll out to approximately ½ cm high and cut into 16 biscuits. Bake at 180°C for 15 minutes.

Once baked, sprinkle with cinnamon and date sugar and tap to remove excess.
