Quinoa with Green Beans and Beetroot Hazelnut Dressing

A perfect side dish, full of colour and flavour, this quinoa with green beans recipe is light yet filling and delicious warm or cool.


100 g roasted hazelnuts
160 g fine green beans
220 g quinoa


½ tsp salt
½ tbsp dried parsley
1 tsp garlic powder
30 ml lemon
45 g raw beetroot
55 g hazelnuts
175 ml water

1 tbsp dried parsley
5 g lemon zest
40 g roasted hazelnuts


Cook the quinoa until fluffy. Trim and steam the green beans. Blend the dressing ingredients until smooth. Combine everything in a bowl and mix well. Pulse blend the sprinkle ingredients and cover the quinoa.
