Two Ingredient Pancakes

These two ingredient pancakes are easy to make, naturally sweet, light and fluffy and can be made with berries, chocolate chips or vanilla. Serve drizzled with maple syrup and top with fresh or frozen berries or grated chocolate.

Makes Fourteen Pancakes

Ingredients

60 g cashews
90 g quinoa
310 ml water

Method

Blend the ingredients for at least 1 minute so that the cashews release their oil and the pancake mix is thick and creamy.

Cook in a hot pan over low heat until each side is browned.
